A hechsher is a certification that a product is kosher, or in compliance with Jewish law. The word "hechsher" comes from Hebrew.
How does a hechsher work?
A hechsher can be a printed certificate displayed at a business or on an advertisement.
It can also be a stamp or emblem on the packaging of a product.
Modern hechsherim may include holograms or seals to prevent forgery.
The certificate will include the name of the rabbinical court that issued it, the name of the product, the date it was issued, and the expiration date.
What is kosher?
"Kosher" is a Hebrew word that means "fit or proper". Kosher food is food that is fit for consumption by Jewish people. Jewish dietary laws, or kashrut, define which foods are kosher, how they should be handled and produced, and which combinations of foods to avoid.
Here's a simple example released recently by the OU (Orthodox Union)

When checking the ingredients of they Hyvee pancake mix, there doesn't seem to be any ingredients that would indicate something that is not kosher, however, the pancake mix is not certified as Kosher by the OU or any other recognized American Jewish agency. Can the pancake mix still be consumed within the context of Halacha (Jewish religious law)?
A few opinions suggest that the pancake mix could be deemed as Kosher, if the sources indicating the ingredients and facilities processing the ingredients are according to specifications. However, the quantum physics theory of Judaism of 'the mind of the Rabbis overseeing the process' would deem the product, slightly questionable. In other words, a simple indicator of how 'devout' or 'traditional' a religious jew is in the level of observance.
These, amongst other very important things and rituals, are a portion of the difference and process in discovering the level of a Kosher or Halal Restaurant.
